Origin and Production

Albino caviar is produced from the albino sterlet sturgeon (Acipenser ruthenus albino), an exceptionally rare and sensitive species. The sturgeon are raised in protected aquatic environments with carefully controlled light exposure, contributing to their distinctive pale pigmentation.

Sterlet sturgeon are slow-growing, requiring a minimum maturation period of eight years before the roe reaches premium quality. This extended process makes Albino Sterlet caviar one of the most exclusive and sought-after caviar varieties.
